Spinach Pancakes…Picky kid approved!!!

I know, I know! Spinach Pancakes that doesn’t sound appetizing at all. That’s what we thought too. On Friday night my husband came up with the idea of trying a recipe for Spinach Pancakes he found. I was less than thrilled. But I eventually complied and he made them for dinner. Going with a Halloween theme he told the kids they were Goblin Pancakes to help them swallow the Green color. We were shocked, surprisingly they were really good. Even our six year old who struggles to consume vegetables gave them two thumbs up!!! Afterwards he confessed to the kids that they were spinach pancakes and they were unfazed. So….We thought we would share! You’ve got to try this recipe. We think you will be pleasantly surprised. 

Spinach Oat Pancakes

1 Cup Oat flour

2 Handfuls of Spinach

2-2.5 medium sized Bananas mashed

2 Tablespoons of Chia seeds

1 Cup of Milk

2 Good size scoops of PB2

1 tsp Baking Powder

Directions: Combine ingredients with a mixer or by hand. Cook in skillet like regular pancakes.

Erin’s passion for nutrition began when she was in college at Drexel University. After taking one nutrition class, she changed her diet and lifestyle, and noticed incredible changes in the way she looked, felt, and even thought. She knew it was her purpose in life to help others do the same.

During her dietetic internship with Sodexo, Erin worked in a wide variety of settings, and found her niche in pediatric and family wellness. She is also an International Board Certified Lactation Consultant! Before joining our team, Erin provided nutrition counseling sessions in pediatricians’ offices and in the homes of families in the Early Intervention program, and worked as school dietitian in the K-12 sector.  Erin likes to work with individuals and families who are looking for realistic, sustainable solutions for a long-term healthy lifestyle.

Erin’s favorite quote is “it’s not about how much you do, but how much love you put into what you do that counts” by Mother Teresa. Her hobbies include exploring Philadelphia, following along with Reese Witherspoon’s Book Club, trying out new exercise classes, going to country music concerts, and of course, eating!
